For many years I baked several times a week - often every day!
That was back when I had kids living at home and many children in the neighborhood.
We had dessert every night with dinner.
I ALWAYS had fresh baked cookies in a covered crock on the kitchen counter.
The kids grew up, times changed.
I am not a great cook but I do enjoy baking.
We are leaving early in the morning for a 10 day visit home -
so I decided to BAKE something to take with me!
I used the recipe of a sister blogger for
over at FABBY'S LIVING.
I made cup cakes........
and ONE layer cake!
It is delicious! Just like the recipe says!
The only change I made was in the frosting.
My mother used to make a brown sugar frosting I dearly loved.
She never measured her ingredients and I have been making it the same way she did for over 40 years -
and it ALWAYS turns out perfect!
Put some brown sugar (about a cup or so) and butter ( a stick or so ) and some evaporated milk (?) in a saucepan. Cook this for a bit. Take off the stove and add some vanilla. Mix in powdered sugar until it is creamy.
Oh, my goodness! It is SO good!!
I seldom make it any more because I WILL eat it!
I shared a few slices of the cake with the RV Resort managers.
They are the nicest people - a husband and wife team.
One slice is wrapped up tight for the family friend who will be helping Amber with the babies tomorrow.
Amber only allowed me to leave TWO cup cakes!
One for her and one for Mike.
The rest of the cup cakes are safe in a tin to leave at my sister's.
I set aside a couple of slices for Louis Dean and me to eat tonight but then forgot about them!
Guess we'll take them home with us.
Louis Dean is already sound asleep and has been for a few hours now.
I have cleaned the camper and packed up the groceries, sacked up the trash and picked out my clothes.
All I have left is to go over to the shower and then crawl into the girl bunk.
I don't want to wake LD up!
He set his alarm for 3 am!
I used to fret about leaving so early on trips but he has made a believer out of me.
The traffic is so much better and you don't spend the DAY traveling.
I SLEEP and he DRIVES!
Win! WIN!!!
We will go straight over to see my mother - as soon as we drop Lucy and Maggie off at our house.
My sister has the guest room bed all made down for Louis Dean to nap in - right after he soaks in a hot bath in her big old fashioned tub!
Mother and I will go out for lunch and Louis Dean will have a good sandwich and a cup of coffee when he gets up. Nita has it all ready for him.
I am so blessed to have such a wonderful family!
I can't wait to see them!!

Yum that icing!! I remember my mom making a brown sugar icing... I wonder if that was what she did...I am going to try it!! Are those pecans ones that LD shelled? Have safe travels!
Linda that icing sounds so good I'm not going to make it, I'm the same way, I'll eat it all up and forget all about the ten pounds I'm trying to lose! lol
You sound so organized, good on ya! That is a win win situation with traveling, no traffic for LD to drive through and you get to sleep all the way home. Enjoy your trip!

Oh I hope that as I write this you are nearing the end of your travels or have already. You must be so eager to see your mother after not being able to last time. Have a wonderful time catching up on all the news and with the rest of your family. Don't try to do too much on this trip home. Just be. Relax and regroup.

I'm salivating over those cupcakes! Enjoy your rest and vacation. I really have a hard time sleeping in the car or on a plane.
That is exactly how my Granny used to cook- a dash, a pinch and a drop! I'd call her for recipes and be so confused by the time we hung up :)
Enjoy your 10 days home and visiting with your family. I know it's long overdue!
