Friday and Saturday.....

I worked all of Friday on the foyer pretty much finishing it in one day except for a few tweaks.
It was my favorite kind of day........staying home and in my comfy clothes with no make up and tacky hair. I don't do this all that often and that's a good thing! One of the things I am very grateful for is make up and hair products! I'll have to get Louis Dean to sing The Very Unfortunate Man for you.
It's a song about a guy that marries what he thinks is an attractive lady.....until their wedding night where she takes off her wig, glass eye, teeth, and on and on......he was, indeed, very unfortunate!


This morning I sipped my coffee in the bee mug Brenda gave me.
I got up early - again.
I admit to being like a child at Christmas and, instead of waking up, rolling over and going back to sleep, I wake up and start thinking about what I'm going to do today.


After my prayer time I took another cup of coffee to the den and wrote out my shopping list for the next week or two. I  also planned a Christmas luncheon for a few friends since I'm not hosting my annual Christmas Tea. I am going to miss doing this and hope to be back at it next year. I truly am making adjustments and scaling back.

I did some work in the living room today and will continue dressing it all up tomorrow afternoon.
Step by step and room by room. Here a little and there a little.
To encourage myself, I go out to the den and sit with my tea or coffee - or wine - and enjoy how pretty it looks. Then I get up and go back to work.


I love Aldi! 
You simply can't beat the prices and I got a huge load of groceries and baking supplies for just under $150!


Chicken Cheese Enchiladas for Saturday night dinner!
Louis Dean prefers flour tortillas and they looked prettier than the corn ones which cracked open.


But after baking, they all looked good and it tasted wonderful!!


I got the recipe from Louis Dean's granddaughter, Chandy.
She is an amazing cook and prepares meals for a really BIG family of  'yours, mine and ours!!'

This recipe (I used two chickens just as she does so basically doubled the recipe) made a big pan of 10 enchiladas - half corn and half flour + another dish of 4 for Pam + another pan for the freezer to use post surgery. Pam came by this evening and I sent her home with some hot from the oven plus the dish for later. She is recovering well from her back surgery and it was good to see her and visit for a little while. I had tortilla chips and various hot sauces that I bought today at Aldi today that we snacked on while the food was baking. They were ALL way too hot!
Guess I'll be taking these down to the ranch to see if Dean and Sherry like them.



My last accomplishment was baking pumpkin muffins for a special little girl who is flying from Puerto Rico in the morning! Rayne dearly loves these and I promised I would be there when she came through the doors with a big pail full just for her!

So this is the last journal entry to comment on in the Christmas painting Giveaway.


I'm cutting it close this time.
It was just glazed last night and needs to dry before I add more detail to the star, allow to dry and glaze again.
I will announce the winner in tomorrow's post and mail it off as soon as it's dry.

I am so enjoying the whole process of preparing the house for Christmas and food for Thanksgiving.

But for now - I am off to bed!
 Rayne arrives in the morning and I am going to BE there to greet her!

I am worn out just reading what you can accomplish in a day's time. You go girl. BTW, I will be at your doorstep next time, for those enchiladas (yummy HEBs R. chicken!) Love your painting Linda...one lucky winner will be so proud!

thanks for the recipe, I had planned to ask in comments for it... I copied it and pasted in an email and sent to myself. I can make adjustments and make it TOPS legal and remove the chilies which I can't eat.. have fun with the rest of the decorating... and great idea for the bucket of muffins meeting with Rayne....

I am amazed at all you get done in a day. I did manage to work on Christmas décor yesterday, made chili, and cleaned a bit. I am glad Rayne is coming and I hope that she enjoys her time here.

Today I'll start taking Fall down and putting it away. I made arrangements to have one of my sons come this week and help get the Christmas bins out of the storage bin and into the house. All that heavy lifting is too much for me anymore. What a blessing he is. Sounds like you are all set for your firs t holiday visitor. Hope you have fun todather and she enjoys the muffins!

Thanks for the Chicken Enchilada Recipe. That sounds like a good one to make and freeze some for later. We went to see A Beautiful Day in the Neighborhood yesterday and had supper at Phil Sandoval's in Huntsville. It is my favorite Mexican restaurant. It is hard to not over eat there. Love your house and I know you will be glad to see Rayne when she arrives. Have a blessed Sunday Linda.

I'm so excited that Rayne's coming! Grands are just the best gift ever, aren't they? I even had "grands" before my own 4 were born - I've adopted (in the loving sense) several over the years and will continue to do so. And doing special things for any/all of them is a gift to me. That enchilada recipe sounds wonderful. Do you keep a damp kitchen towel over the corn tortillas while preparing? That sometimes help them not crack. Whatever, it looks like it tastes delicious in the end, and that's what I care about. A good recipe to have during the holidays when everyone is tired of turkey and ham.Thanks for sharing! Your home is looking so, so Christmasy and beautiful!

Linda, Hug Rayne for all of us. Your home looks so cozy and bright. I wish we lived where I could sip coffee outside in November. I have at certain times...but it is not always nice. The enchiladas sound so good. I usually make beef. Will try these sometime since you included the how to.

I haven't started decorating for Christmas yet. Hope to do more this year than last though like you I am babying a knee.

I like those days I can relax and just being myself. I probably scare people too. There was a video once I saw of a man and a women - I guess they had just gotten married - and they both started taking off things and they both ended up looking like a mess! lol

oh i do love the "bee" mug, it is so sweet!! your recipe for enchiladas sounds so good, chuck prefers corn, i prefer flour...this is a great way to please everyone. i am feeling a little overwhelmed with christmas coming, and the whole decorating thing!! you have inspired me some!!

You do keep yourself busy! Shopping, decorating, baking, Those enchiladas look amazing as does those pumpkin muffins. I love pumpkin anything I'll even go as far as adding chocolate chips to the batter when I'm making pumpkin cookies. Your tea/reading room looks so cozy and festive. I'll be decorating next weekend after Thanksgiving. It seems like such a task but once I dive in, I love it. I'd also love to hear Louis Dean singing Unfortunate Man haha even though we all know he a very lucky man!!
