Duck Eggs!


Duck eggs and beautiful brown hen eggs!
Gifts from my stepson who lives in the country with a variety of critters!
I am going to do some baking with the duck ones.
Perhaps another pear cake or some mincemeat bars.
I plan to bake on Monday so it will all still be fresh on Tuesday when he returns from a trip to Canada.


Oops! Looks like there is a broken one. I best deal with that now.

Louis Dean has been up on our roof again this evening. This is getting to be a regular thing for him!
This afternoon when we returned from our walk at the Senior Center and a trip to Home Depot
we noticed branches had cracked under the weight of the pecans. Several had completely covered the pipe from the fireplace. He cut those down and will buy one of the 'chain saw on a stick' things tomorrow to cut other low hanging branches. The good news is - it looks like we will have a bumper crop of pecans this year. We had NONE last year and a pretty good crop the year before.
Shelling pecans is one of Louis Dean's favorite things to do.
Baking with pecans is one of mine!


As I write this the entire East Coast is bracing for Irene. Irene just happens to be my middle name.
Prayers for safety during this scary time.

I live in the country (like in the sticks) & I had never had fresh eggs until the other day. A guy my hubby works with sent me a dozen. I didn't even know if you could actually cook with them or not, I had to call and ask mom LOL.

Poor Louis Dean is getting good at being on that roof. Pretty soon he will be up there lounging around & reading a book!!!!

I'm right there with ya praying for those who are going to be impacted by Irene. Hopefully it won't be as bad as they are predicting.

I'm off to Bristol to the races tomorrow night but I'll check back in with you Saturday :) Have a great weekend!

We also get fresh eggs from my brother in law. I laugh at friends who say ewwwww. where do they think store bought eggs come from? I hope its a chicken and not a machine. LOL I've never had duck eggs but hear they are wonderful to eat. Matter of fact I've been told once you eat duck eggs it's hard to go back to chicken eggs. Enjoy!

Fresh eggs are great to bake with but if you want to hard boil eggs they need to be at least over a week old
to peel better. I use to have the worst time boiling eggs, they always
turned out ugly trying to peel them.
Then a friend of mine told me fresh eggs to not hard boil very well. I found out she was right! I make sure
the date is over a week.

Oh, my goodness. I hear you there, about the pecans. It is my favorite pie - pecan pie. :)

What a neat variety of eggs!.. Tell Louis Dean to be safe on that roof...and Pecans...my favourite nut... I pronounce them Pea Cans...my sister in law is from the USA and always gives me a hard time about that!!...
